What is kombucha mushroom?

It represents the symbiosis of fungus and bacteria.   It is a tea mushroom, which means that a drink is used, that is, tea that is created by fermentation of sugar. The mushroom itself has a pithous mass and takes on a shape that depends on the container in which it is kept when making the drink.  Over time, it grows, mostly covering the entire surface of the vessel and expanding in thickness. As the kombucha grows, it is possible to make larger quantities of the drink or tea. The main component of the tea is gluconic acid, which is produced by bacteria that are in symbiosis with the kombucha mushroom. Gluconic acid itself is a product of the liver and is the main cleanser of the body. By consuming the drink, we simply help the liver in its function and thereby facilitate and speed up the cleansing of the body. Kombucha tea has been used for centuries in Russia and Asia and is thought to promote longevity. This tea contains concentrated high-quality proteins that the body can immediately use. The first one supports the creation of several important polysaccharides: hyaluronic acid, necessary for connective tissue, chondroitin-sulphate acid, which is the basis of our cartilage, mucoitin-sulphate acid, essential for our mucus and the vitreous body of the eye, as well as heparin, while lactic acid is extremely useful for the colon. Kombucha also produces several vitamins and enzymes that are beneficial to the human body. It also acts as a natural antibiotic. But it is also interesting to note that people who drink two and a half deciliters of kombucha tea every day do not have wrinkles on their faces or other visible signs of aging, such as gray hair or age spots on their hands. It has also been established that this drink lowers blood pressure, stimulates the work of the glands, stimulates metabolism, i.e. helps burn fat, thereby reducing body weight, lowers urea, sugar and cholesterol in the blood, helps with rheumatic and arthritic disorders (increases the mobility of the joints and the elasticity of the spine and sacrum), irregularities in the work of the stomach, liver and kidneys, bone pain, arteriosclerosis, skin diseases. It also restores the intestinal flora, thus helping with constipation and accelerating circulation, and it also helps people under stress.

How to make kombucha drink - tea?
To make a drink or tea from kombucha mushrooms, you need the following:
  1. Kombucha Mushroom
  2. Black and green tea (or any other such as mint, chamomile...)
  3. Šecer
  4. A glass container, preferably a two-liter jar or larger
  5. Gaza
Brew tea from 100 g of sugar in 2 liters of water and add black and green tea to taste (about two filter bags each or in proportion to that in the refuse).
When the tea has cooled, pour it into a glass container and place the kombucha so that it floats on the surface of the tea. It is necessary to cover the container with a cloth and close the opening of the jar with cheesecloth. It is very important that the container is in a dark place that is at room temperature. The very process of creating the kombucha drink has a number of side effects, such as a specific smell during fermentation. The time period for making the drink is about 7 days. After that, you need to strain the drink and repeat the process of cooking black and green tea with sugar, with the fact that you take 2 dl of the already prepared drink and pour it into a new drink, and wash the mushroom itself under cold water and return it to the glass container.  Since the fungus creates gluconic acid, and it gives acidity to the tea, it is necessary that the drink be mildly acidic, so that the optimal acidity is achieved after 7 days, although the procedure can be shortened or extended, but not less than 5 days.
